1) I picked this build because using your guide allows you to solo, and you need to be able to do a lot of damage fast. I also DID NOT pick two-hand specialization because with duel wield at lvl 20 you can do much more dmg per second with two one hand weapons. This build will help you to generate more damage over time (DOT) and damage per second (DPS) if you use dual-wield. There is no need, in my opinion, to put points in protection because warriors can get some of the best armor in the game.

2) I always keep a shield handy if I think the battle will be difficult I change to the shield because the shield bash ability is handy in stunning an enemy or stopping a spell (especially fear from warlocks in PvP).

3) Also I would recommend getting a crossbow or gun ability. The crossbow can be picked up at Stormwind and the gun in Ironforge. This can help in creating a good pull if other enemies are too close to do a charge.

4) As far as professions or skills it is really up to you. I went into mining and blacksmithing because you can make some great stuff. Some will tell you to stay away from it because you can find better stuff as you gain levels. This is very true at the higher levels. You can also make a great deal of money this way by selling the higher level creations. If you follow the guide Brian has made you will find mining spots along the way, and it does eat a little bit of time, but only make stuff as you are located near the towns. There is a good point for herbalism/alchemy (great for buffs), but I still think the mining/blacksmith is a better route.

5) For attacking in PvE, use the following if there are no enemies too close to your target.

6) Charge -> Thunder Strike (to slow attacks) -> Sunder Armor -> Rend

7) If you have built according to the talent build above the charge will build your rage some allowing you to wait that second or so to get the Thunder Strike. After that I use Hamstring to keep them from running (if they are prone to do so) and then Heroic Strike continually until dead.

8) If the target is too close to pull alone I usually do this:

9) Blood Rage -> Fire Crossbow/Gun -> Rend -> Battle Shout -> Heroic Strike

10) If I suspect it will be a longer fight I choose to wait and hit the target with Thunder Strike and/or Sunder Armor.

11) Another talent to build regardless of profession is cooking and first aid. As a warrior you will take the brunt of the damage either alone of in a group because you will draw the majority of the aggro. The first aid will allow you to create great bandages and anti-venoms as you gain in the ability. I suggest cooking only for the recipes that help you gain stamina. As a low level warrior I would eat an herb-baked egg before a fight to give me the hp boost from the stamina. It does help. Also if you do not take herb/alc as a profession I suggest spending a couple of silver on potions to boost defense, strength, and healing because they will come in handy.
